Did you know June marks the beginning of Strawberry Season? In honor of the delicious, red, juicy fruit I’m sharing one of my favorite mid-morning or late afternoon snacks, a gluten free smoothie full of superfoods and of course strawberries!
Lets be real, gluten free ingredients come at a premium and gluten free baking takes a lot of time, effort and money, especially with the whole trial and error thing. Luckily, making perfect gluten free muffins is a lot easier than you think. Considering I am probably the laziest gluten free baker there is, you know I’m telling the truth. There is no shame in my game, I want all the glory and none of the pain. Which is why I’ve learned how to make the most perfect golden brown, moist, chocolatey and delicious gluten free muffins with minimal effort and a few good tricks!
Perfect to start your day or as a mid-day snack- this smoothie is literally one of my favs! I probably make it at least 3-4 times a week. It’s quick and easy, especially if you are using frozen fruit.
Not only does it taste fresh and delicious it’s a great way to get your fill of veggies and fruit.
I love watching cooking shows and coming up with healthy ways to modify the recipes into gluten free friendly versions. I actually saw the Barefoot Contessa make raspberry butter on one of her early pilot season episodes. She was baking fresh scones for a posh Sunday brunch in the Hamptons and blew my mind with this simple and colorful way of dressing up her butter.
I love little details like that!
I’m always looking for healthy ways to start my day off right, so when some good friends of mine shared this recipe with me I jumped all over it! This ultimate pancake is lean, clean, protein packed and gluten-free. Needless to say it’s become a staple breakfast at my house ever since. I’ve made some modifications over time but this breakfast fuels my body and keeps me going without the pangs of hunger that I typically feel by 9 am.
I’m not just another health fad follower jumping on the Gluten Free bandwagon. I was diagnosed with Celiac Disease at 19…fast forward to 2015 and it’s been 10 years of living, eating and cooking gluten-free! It wasn’t always easy but I’ve learned a lot along the way and I’ve also grown to love the challenge of trying out and even creating recipes that are as delicious as they are healthy.
I recently came across a new recipe that I just had to try, Gluten Free Banana Cakes.
