Gluten Free Italian Turkey Meatballs

Italian food has always been synonymous with comfort food for me. Which is probably why I am a sucker for a good Italian meal and makes my Celiac diagnosis a real tragedy. Luckily I’ve been able to modify some of my favorite classic Italian recipes with some healthier alternative ingredients and some pretty decent gluten free products.

Who doesn’t love a good Italian meatball?!? I’ll admit, the idea of a hunk of ground meat rolled into a ball is a bit off-putting in theory but Italian meatballs are just so damn delicious and versatile…I mean you can eat them alone, on a sandwich, over pasta or even on a pizza.

For my close friends and family, my love for meatballs isn’t really a big surprise considering “that’s a good meatball” is one of my most favorite quotes from the Adam Sandler classic, The Wedding Singer. And I’m not going to lie, I also love my cured meats (pepperoni, salami, bacon, taylored ham).

But it’s also really important to me to maintain a well balanced diet. In fact, my husband and I are super conscious about making sure we don’t over do it with our consumption of red/salty meats. That’s why I love this gluten free turkey meatball recipe. Not only are we cutting back on red meat but I also like to throw in some spinach for good measure.

Ingredients:

1 lb. ground turkey meat

1 cup organic spinach

1 clove garlic minced

1 egg

1/2 cup 4Cs Gluten Free Italian seasoned breadcrumbs

1 /4 cup parmesan cheese

1 tablespoon olive oil

Preheat oven to 375 degrees and line a baking pan with foil. Heat up olive oil in a pan at medium high heat. Sauté garlic in olive oil until aroma really opens up (1-2 minutes). Add in spinach and cook until wilted. Remove from heat and set aside.

In a medium sized bowl add in turkey meat, egg, gluten free breadcrumbs, cheese and spinach mixture (once it has cooled enough to handle). Using your hands combine the ingredients until everything is well mixed.

Start forming the turkey meatballs by grabbing a small handful of meatball mixture and roll into about twelve 1 1/2 – 2 inch round balls. Place the turkey meatballs on your baking pan and place in oven for 20 minutes.

Serve over your favorite gluten free pasta and sauce. Garnish with fresh basil.

With the quick prep and cook time this is a great meal for those busy week nights when you don’t have a lot of time but you don’t want to sacrifice taste, quality and your health.
