We are officially one week out from Halloween! With the countdown on we thought it would be fun to test out some fun gluten free Halloween dessert recipes. Always a classic, the rice crispy treat is getting a fun and festive makeover with this Pumpkin inspired recipe!
If you aren’t into baking or are looking for a recipe that is short in sweet then you are in luck. It doesn’t take much to make these crowd-pleasing cute little guys. Start with the traditional rice crispy treat recipe..ready-set-google! Once the butter and marshmallow has melted down it’s time to add the food coloring. It proved impossible to find orange food coloring but then I remembered grade school art class and combined equal parts red and yellow food coloring. Yay, for primary colors! Give it a good stir, making sure the colors are fully combined. Then add in the gluten free Rice Krispy cereal stirring thoroughly again. Remove from heat and let cool for a minute or two. Coat your hands with vegetable oil or coconut oil so the crispy treat mix doesn’t stick and start grabbing it by the handful and sculpt your little pumpkins. We were able to make about 12 pumpkins taking 4 ounces at a time. For the pumpkin stems we used tootsie rolls. An entire tootsie roll seemed a bit aggressive so we twisted them in half, which also gave it more of a stem like detail! You will be surprised at how well the stem attaches with minimal effort.
