Healthy Gluten Free Snacks: Coconut Oil Popcorn

Healthy snacks are hard enough to come by, add gluten free to the mix and things tend to get a little more tricky. I tend to do a lot of home cooking and like to prepare healthy snacks from scratch. That’s how you know you’re getting the healthiest and freshest ingredients.

If you haven’t tried it, making popcorn from scratch is a lot cheaper, yummier and more fun than buying the pre-made stuff at the grocery store. Once you’ve tried this recipe you will know what we mean.

how to make popcorn from scratch

Here’s what you need:

  • 1 heaping tablespoon coconut oil
  • 5 tablespoons popcorn kernels
  • pinch of salt (optional)

This will make enough popcorn to last a few days if you ration yourself.

Heat up a medium sized pot on low heat.

Add in the coconut oil and give it a few minutes to heat up.

Add in the popcorn kernels and give it a good stir to get them evenly coated with coconut oil.

Let the kernels cook on low heat for about 5 minutes, maybe a little longer and listen to those babies pop.

OH, and I strongly recommend placing a lid on the pot so your popcorn doesn’t fly all over!

Season with a pinch of salt and enjoy.
